These cookies are awesome!!

These aren't really "cookies" because they are actually really healthy, but the vanilla and the chocolate chips make them seem like a treat. Gluten-free, vegan (if the chocolate chips are vegan) and full of good things these cookies are always received very well. When I want them to be even healthier I switch the chocolate chips with cacao nibs, they are actually just as yummy.

 Let me know if you think of a good name for these, for now I just call them Healthy, Yummy Cookies! but I think they deserve a more interesting name.

Ingredients

  • 2 cups * Gluten Free rolled oats
  • 1/2 cup millet flour*
  • 1 tbsp cinnamon 
  • 1 tsp salt
  • 1/4 cup golden raisins
  • 1/2 cup dark chocolate chips
  • 1/2 cup coconut flakes
  • 1/4 cup flax meal
  • 2 tbsp chia seeds
  • 3/4 cup water
  • 1/4 cup almond or other nut butter (Raw almond butter is the best)
  • 1/4 cup agave nectar, maple syrup or honey
  • 1 1/2 tsp vanilla extract

* I used millet because of its sweet, nutty flavor, but you could most likely use other gluten-free flours.

 

Directions

  1. Preheat oven to 350ºF
  2. In a large bowl, combine first seven ingredients (oats through coconut flakes)
  3. In a separate bowl, mix flax meal and chia seeds with the water, set aside and let rest for 10 minutes. Then stir in the agave nectar, almond butter and vanilla extract. 
  4. Stir the flax mix into the bowl with the oats, add up to another 1/4 cup of water if dough looks too dry.
  5. Drop cookies by the rounded tablespoon onto a prepared baking sheet, and bake until golden brown on the bottom and just starting to turn golden on top, about 8 to 11 minutes.

Makes about 30

 Each cookie has approximately 75 calories, 4.3 grams of good fats, 2 grams of fiber, and 2.6 grams of protein.
